بسته بندی فعال غذاها یکی از مفاهیم ابتکاری بسته بندی مواد غذایی است که به صورت پاسخی به تغییرات دائمی در تقاضاهای فعلی مصرف کننده و روندهای بازار معرفی شده است. اکثر تکنیک های بسته بندی فعال با موادی ارتباط دارد که جذب کننده اکسیژن,اتیلن,رطوبت,دی اکسید کربن و طعم ها یا بوها هستند و همچنین آنهایی که آزاد کننده دی اکسید کربن,عوامل ضد میکروبی و ضد اکسنده ها و طعم ها هستند. اهداف اصلی مقاله عبارتنداز:1- فراهم کردن یک مرور تحقیقی درمورد انواع مختلف مفاهیم بسته بندی فعال با توجه به مکانیسم عمل,کارایی و تاثیرات برروی غذاها 2 - فراهم کردن یک روش پیشرفته درمورد توسعه آزمایشی و تجاری کردن مفاهیم بسته بندی فعال 3 - فراهم کردن حوزه ای از کاربردها و4- بحث کردن در مورد موانع موجود در گسترش عملی کردن کاربرد تجاری بسته بندی فعال در اروپا.
در سال های اخیر بسیاری از مفاهیم بسته بندی غذایی معرفی شده بودند. مصرف کننده ها به طور روزافزون به طور خفیفی غذاهایی را که مناسب نگه داری شده باشند تقاضا می کنند که کیفیت ان تروتازه باقی بماند. به علاوه تغییرات در عملکردهای خرده فروشی و توزیع همچون تمرکز فعالیت ها ، روندهای جدید (مثل خرید اینترنتی) و بین المللی کردن بازارها منجربه افزایش فاصله های توزیع و زمان های نگه داری طولانی تر مجموعه ای از محصولات مختلف با نیازمندیهای مختلف ما می شود و تقاضاهای زیادی را درمورد صنعت بسته بندی غذایی قرار می دهد. مفاهیم بسته بندی سنتی محدود به تواناییشان برای به تاخیرانداختن طول عمر نگه داری فراورده های غذایی هستند. بسته بندی فعال مفهومی ابتکاری است که می تواند به صورت نوعی بسته بندی تعریف شود که تغییردهنده حالت بسته بتدی برای امتداد دادن طول عمر نگه داری یا بهترکننده ایمنی یا ویژگیهای حسی در زمان حفظ کیفیت غذایی است. این تعریف بسته بندی فعال برای پروژه فیر اروپا انتخاب شده بود. مهم ترین مفاهیم بسته بندی فعال همچون ربایش اکسیژن واتیلن ,رباینده های دی اکسید کربن ,پخش کننده وتنظیم کننده های رطوبت و مفاهیم بسته بندی ضد میکروبی ,آزاد کردن ضد اکسنده و آزاد کردن یا جذب طعم ها و بوها با جزئیات در این مرور توضیح داده شده است.

1-1 - فن آوری جذب اکسیژن:
در بسیاری از مواقع, فساد غذا توسط اکسایش تشکیل دهنده های غذایی یا توسط کپک ها با وجود اکسیژن ایجاد شده است.اگرچه غذاهای حساس به اکسیژن می توانند به طور مناسبی با به کارگیری بسته بندی جوی تغییر یابند یا توسط بسته بندی خلاء بسته بندی شوند، این فن آوری ها همیشه کاملاً حذف کننده اکسیژن نیستند. به علاوه اکسیژن که ازطریق لایه بسته بندی به داخل نفوذ می کند نمی تواند با این تکنیک ها حذف شود. با به کارگیری یک جاذب اکسیژن که جذب کننده اکسیژن باقیمانده بعد از بسته بندی است تغییرات کیفیت غذاهای حساس به اکسیژن غالباً
می تواند به حداقل برسد. به طور کلی فن آوری های فعلی جذب اکسیژن از یک یا بیشتر مفاهیم زیر استفاده می کند: اکسایش پودرآهن، اکسایش اسید آسکوربیک ، اکسایش رنگ حساس به نور,اکسایش آنزیمی(مثل اکسید از گلوکز و اکسید از الکل),اسیدهای چرب اشباع نشده (مثل اسید اولئیک یا اسید لینولنیک) و مخمر غیرمتحرک در یک ماده خاک{1}.

FAIR-project CT 98-4170 اروپا که درژانویه 1999 شروع شد به طور مشترکی در چارچوب برنامه EU FAIR با 9 سازمان تحقیقاتی و3 شرکت صنعتی انجام شد. در کشورهای مختلف بسته بندی موثر قبلاً به طور موفقیت آمیزی کاربردی بوده است. در اروپا پیشرفت و کاربرد این مفاهیم به علت محدودیت های قانونی و ترس از مقاومت مصرف کننده و عدم دانش درمورد کارایی چنین مفاهیمی و تاثیر اقتصادی و محیطیشان است. برای تواناسازی کاربرد مفاهیم موثر و هوشمند در سرتاسر اروپا و برای برقرارکردن و تکمیل کردن این مفاهیم در مقررات مربوطه فعلی برای بسته بندی غذایی در اروپا، پروژه اروپایی فوق درحال انجام است.
اگلز متداول ترین سیستم جذب اکسیژن براساس اکسایش آهن است. بالشتک(کیسه ی پلاستیکی کوچک) برای کاهش دادن سطوح اکسیژن به کمتراز0.01 درصد طراحی شده اند.اصول کلی ان این است که 1 گرم آهن با 300 سی سی اکسیژن واکنش نشان خواهد داد. زمانی که غلظت اولیه اکسیژن در لحظه بسته بندی و نفوذ پذیری ماده غذایی شناخته شده است یک جذب کننده می تواند با ظرفیتی بالاتر نسبت به ظرفیت محاسبه شده مورد نیاز انتخاب شود. با این روش فقدان کلی اکسیژن درطول عمر نگه داری فراورده تضمین شده است. هرچند خطر بالقوه ی خوردن تصادفی مقدار زیادی آهن علیرغم برچسب نخورید می توانست باشد. بالشتک های دیگر جذب کننده ی اکسیژن براساس آهن جذب کننده اکسیژن ATCO وسری های فریشیلایزر وویتالون وسنسوکات وفریشپکس هستند.بالشتک ها می توانند در بسته های بسیاری از غذاها من جمله خمیر تازه و قبلاً پخته شده,غذای های مهمانی, فراورده های گوشتی (مثل ژامبون دودی و سالامی ) ، فراورده های نانوایی (مثل نان ورویه پیتزا و شیرینی جات وکیک ها)، پنیر,قهوه,آجیل وچیپس های سیب زمینی یافت شوند.
